    Prepare the Calamari

    Rinse the cleaned calamari under cold water and pat dry with paper towels. Cut them into rings if not already done.

    Chop the Scallions

    Chop the scallions into small pieces, separating the white parts from the green tops.

    Dice the Tomatoes

    Dice the tomatoes into small cubes and set aside.

Cooking

    Sauté Garlic and Pine Nuts

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and pine nuts, cooking until the garlic is fragrant and the pine nuts are golden brown, about 2-3 minutes.

    Add Calamari

    Add the calamari rings to the skillet and sauté for 2-3 minutes until they start to turn opaque.

    Incorporate Tomatoes and Raisins

    Stir in the diced tomatoes, golden raisins, and white wine. Season with salt and black pepper. Allow the mixture to simmer for about 5-7 minutes until the tomatoes break down and the sauce thickens slightly.

    Add the chopped white parts of the scallions and cook for an additional 2 minutes. Remove from heat and stir in the green tops of the scallions for garnish.
