Prepare dry mix
In a shallow bowl combine the all-purpose flour with 0.5 teaspoon kosher salt, 0.5 teaspoon black pepper, and 0.5 teaspoon smoked paprika. Whisk to blend.

Prepare egg wash
In a second shallow bowl beat the 2 large eggs with 2 tablespoons cold water until smooth.

Prepare breadcrumb mix
In a third shallow bowl combine the panko breadcrumbs and the optional grated Parmesan; mix and set beside the other bowls.
Avocado

Halve and slice
Cut each ripe but firm avocado in half lengthwise, remove the pit. Gently score each half vertically into 4 equal slices without cutting through the skin (or remove skin and slice into 8 wedge-shaped slices per avocado). If you prefer wedges, scoop out each half and cut into 6–8 wedges.

Acid and season
Lightly brush or toss the avocado slices with 1 tablespoon lemon juice and sprinkle 1/2 teaspoon kosher salt to help prevent browning and add flavor. Work gently to avoid mashing the flesh.

Bread the avocado
Working in batches to avoid crowding, dredge each avocado slice first in the seasoned flour (shake off excess), then dip into the egg wash, and finally press into the panko-Parmesan mixture to fully coat. For an extra-crisp double coat, repeat the egg and panko step. Place breaded slices on a tray while you finish.

Make the sauce
Whisk together 1/2 cup Greek yogurt or sour cream, 2 tablespoons mayonnaise, 1 teaspoon hot sauce, 1 tablespoon lime juice, 1/2 teaspoon honey (or sugar), and 1/4 teaspoon salt until smooth. Taste and adjust seasoning—add more hot sauce for heat or lime for brightness.
Finish and serve

Arrange the fried avocado on a serving platter, garnish with chopped cilantro or parsley and lime wedges. Serve immediately with the dipping sauce on the side.
