Prepare the Carrots

Peel and slice the carrots into thin rounds.

Season and Cook

In a large skillet, heat olive oil over medium heat. Add the sliced carrots, cumin, coriander, paprika, salt, and pepper. Cook for about 10-15 minutes, stirring occasionally, until the carrots are tender.

Garnish

Remove from heat and stir in chopped cilantro before serving.

Muhammara (Beet Hummus)

Blend Ingredients

In a food processor, combine cooked beets, tahini, garlic, lemon juice, olive oil, cumin, salt, and water. Blend until smooth.

Adjust Consistency

If the mixture is too thick, add a little more water.

Grilled Flatbread

Prepare the Dough

In a bowl, dissolve yeast in warm water. Let sit for 5 minutes. In a large bowl, combine flour and salt, then add the yeast mixture and olive oil. Mix until a dough forms.

Knead and Rest

Knead the dough on a floured surface for about 5 minutes. Place in a greased bowl, cover, and let rise for 1 hour.

Shape and Grill

Divide the dough into 6 pieces, roll them out, and grill on a preheated grill for about 2-3 minutes on each side until golden.
