Cook the Shallots
Thinly slice the shallots. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the shallots and cook until crispy, about 5-7 minutes. Remove from heat and set aside.
Cook the Steak
Season the hanger steak with salt and black pepper. In a large skillet, heat the remaining olive oil over high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from heat and let rest for 5 minutes.
Prepare the Cherry Tomatoes
While the steak is resting, toss the cherry tomatoes in a bowl with a drizzle of olive oil, salt, and black pepper.
Serve
Slice the hanger steak and plate it. Top with the Valdeón blue butter, crispy shallots, and the seasoned cherry tomatoes. Garnish with fresh parsley.
