    Prepare the Shrimp

    In a bowl, combine the flour, cornstarch, cajun seasoning, salt, and black pepper. Dip the shrimp in buttermilk, then coat in the flour mixture.

    Fry the Shrimp

    Heat vegetable oil in a deep skillet over medium-high heat. Fry the shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Make the Dirty Rice

    In a separate pot, heat a bit of oil over medium heat. Sauté the onion, bell pepper, celery, and garlic until soft. Stir in cooked rice and season with cajun seasoning, salt, and black pepper. Mix well.

    Prepare the Crawfish Étouffée

    In a saucepan, sauté the onion, bell pepper, and celery until soft. Add garlic and crawfish tails, cooking for another 2-3 minutes. Stir in cajun seasoning, chicken broth, and heavy cream. Simmer for about 10 minutes until thickened.

    Assemble the Dish

    On a plate, serve a bed of dirty rice, top with fried shrimp, and generously spoon over the crawfish étouffée. Garnish with green onions.
