Method

Prepare the Ribeye

    Prepare the Ribeye Steak

    Tenderize the ribeye steak if needed. Cut it into smaller pieces suitable for sandwiches.

    Batter the Ribeye

    In a bowl, mix the flour, cornmeal, salt, pepper, garlic powder, and paprika. In another bowl, whisk the eggs and buttermilk together. Dip the ribeye pieces first in the flour mixture, then in the egg mixture, and again in the flour mixture to coat.

    Fry the Ribeye

    In a large skillet, heat the oil over medium-high heat. Fry the battered ribeye pieces until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

Make the Gravy

    Prepare the Gravy

    In a saucepan over medium heat, melt the butter. Stir in the flour and cook for 2 minutes. Gradually whisk in the milk, stirring constantly until thickened. Season with salt and pepper.

Assemble the Sandwich

    Build the Sandwich

    On po-boy bread, layer lettuce, fried ribeye, tomato slices, and pickles. Drizzle with the gravy and top with the other piece of bread.

    Cut the sandwich in half and serve hot with additional gravy on the side.
