Wash and scrub the russet potatoes thoroughly. Cut them into wedges, ensuring they are of even thickness for uniform cooking.

Soak the Wedges
Place the potato wedges in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and achieve crispiness.

Heat the Oil
In a large deep skillet or fryer, heat the vegetable oil to 350°F (175°C).

Dry and Fry the Wedges
Drain the soaked potato wedges and pat them dry with paper towels. Carefully add a batch of wedges to the hot oil and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
