    Prepare the Shrimp

    In a bowl, whisk together the egg and milk. In another bowl, mix the flour, cornmeal, salt, black pepper, and cayenne pepper. Dip each shrimp first into the egg mixture, then into the flour mixture, ensuring they are well coated.

    Fry the Shrimp

    Heat the vegetable oil in a deep skillet or fryer over medium-high heat. Once hot, carefully add the coated shrimp in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.

    Assemble the Poboy

    Slice the po-boy bread lengthwise, leaving one side attached. Spread a generous amount of tartar sauce inside. Add the fried shrimp, and drizzle a little more tartar sauce on top.

    Serve

    Cut the po-boy in half and serve immediately while hot.
