Fried Oysters and Po-Boy Assembly

    Prepare the Oysters

    Shuck the oysters and rinse them under cold water. Pat them dry with paper towels. Season with salt and black pepper.

    Coat the Oysters

    In a bowl, mix the cornmeal and flour. In another bowl, beat the eggs and mix with milk. Dip each oyster in the egg mixture, then dredge in the cornmeal mixture until fully coated.

    Fry the Oysters

    Heat oil in a deep pan over medium heat. Once hot, fry the oysters in batches until golden brown and crispy, approximately 2-3 minutes per side. Remove and drain on paper towels.

    Cook the Bacon

    In a skillet, cook the bacon until crispy. Remove and drain on paper towels, then crumble into pieces.

    Assemble the Po-Boy

    Slice the po-boy bread lengthwise. Layer the fried oysters, crumbled bacon, and shredded cheddar cheese. Drizzle with tartar sauce to taste.

    Serve

    Close the po-boy and serve immediately while hot.
