Papa Don's Cajun Gumbo Recipe
Our own family recipe of chicken and sausage gumbo mixed in roux with onions, cenery and okra. Served over white rice with toast.

Prepare the Roux
In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until the mixture turns a rich brown color, about 15-20 minutes.

Add Meats
Add the smoked sausage and chicken thighs to the pot. Stir to combine and cook for about 5 minutes.

Add Broth and Seasonings
Pour in the chicken broth, then add the okra, cajun seasoning, bay leaves, salt, and black pepper. Bring to a boil, then reduce to a simmer.

Simmer the Gumbo
Let the gumbo simmer for at least 30 minutes, stirring occasionally. Adjust seasoning to taste.

Cook the Rice
While the gumbo is simmering, cook the white rice according to package instructions.

Serve
Remove the bay leaves from the gumbo. Serve the gumbo over a bed of white rice, garnished with chopped parsley and with toast on the side.
