    Prepare the Roux

    In a large pot, melt the butter over medium heat. Gradually stir in the flour to create a roux. Cook, stirring constantly, until the roux is a dark golden brown color, about 15-20 minutes.

    Add Vegetables

    Add the diced onions, celery, and bell pepper to the roux. Sauté for about 5 minutes, until the vegetables are tender. Stir in the minced garlic and cook for another minute.

    Add Crawfish and Spices

    Stir in the crawfish tails, chicken broth, cayenne pepper, paprika, salt, and black pepper. Bring to a simmer, then reduce heat to low and let it cook for 15-20 minutes, stirring occasionally.

    Serve

    Serve the crawfish etouffee over cooked rice, garnished with chopped green onions. Pair with slices of French bread on the side.
