Gumbo Preparation

    Cook the Base

    In a large pot, heat olive oil over medium heat. Add onion, green bell pepper, celery, and garlic. Sauté until the vegetables are soft.

    Add Meat and Spices

    Stir in the chicken, sausage, Cajun seasoning, bay leaves, salt, and black pepper. Cook for about 5 minutes.

    Add Liquids

    Pour in the chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 30 minutes.

    Finish the Gumbo

    Add okra and simmer for an additional 10 minutes. Stir in chopped parsley before serving.

Crawfish Pies Preparation

    Prepare Filling

    In a skillet, sauté onion, bell pepper, celery, and garlic until softened. Add crawfish, Cajun seasoning, salt, and pepper. Cook for about 5 minutes. Let cool.

    Assemble Pies

    Preheat the oven to 400°F (200°C). Roll out the puff pastry and cut into circles. Place a spoonful of the crawfish mixture in the center of each circle. Fold over and seal the edges with a fork.

    Bake the Pies

    Brush the tops with beaten egg. Place on a baking sheet and bake for 20-25 minutes or until golden brown.

    Toast the Bread

    Spread butter on each slice of bread and toast in a skillet over medium heat until golden brown on both sides.
