Preparation and Cooking

Marinate the Gator
Soak the alligator pieces in buttermilk for at least 1 hour to tenderize the meat.

Prepare the Cajun Fries
Cut large potatoes into fries. Rinse them in cold water and soak for at least 30 minutes. Drain and pat dry.

Fry the Fries
In a deep fryer or large pot, heat oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt and Cajun seasoning.

Coat the Gator
In a bowl, mix together flour, cornstarch, Cajun seasoning, salt, and black pepper. Drain the alligator pieces from the buttermilk and dredge them in the flour mixture, shaking off any excess.

Fry the Gator
In the same hot oil, fry the coated alligator pieces in batches until golden brown and cooked through, about 3-5 minutes. Remove and drain on paper towels.

Serve the fried gator alongside the Cajun fries. Enjoy!
