    Prepare the Fish

    In a bowl, mix flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk the egg and milk together.

    Coat the Fish

    Dip each fish strip into the egg mixture, then coat it with the flour-cornmeal mixture, ensuring it's evenly covered.

    Fry the Fish

    Heat vegetable oil in a deep skillet over medium-high heat. Fry the coated fish strips for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    Assemble the Poboy

    Slice the po-boy bread lengthwise, leaving one side intact. Spread tartar sauce inside the bread. Add a layer of lettuce, then place the fried fish strips on top, followed by tomato slices.

    Serve

    Close the bread and serve immediately while hot.
