Prepare the Crawfish
In a bowl, mix the flour, cornmeal, and cajun seasoning. In another bowl, whisk together the eggs and buttermilk.

Coat the Crawfish
Dip the crawfish tails into the egg mixture, then coat them in the flour mixture.

Fry the Crawfish
In a large skillet, heat vegetable oil over medium-high heat. Fry the coated crawfish tails in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Assemble the Poboys
Slice the po-boy bread lengthwise, and layer fried crawfish, shredded lettuce, and sliced tomatoes inside. Drizzle with tartar sauce.

Serve the crawfish poboys warm with extra tartar sauce on the side.
