Crawfish Pies

    Prepare the Filling

    In a skillet, sauté onion, bell pepper, celery, and garlic until soft. Add crawfish meat and Cajun seasoning. Cook for 5 minutes and set aside.

    Assemble the Pies

    Roll out puff pastry and cut into circles. Place a spoonful of the crawfish mixture in the center. Fold and seal the edges. Brush with egg wash.

    Bake

    Preheat the oven to 375°F (190°C). Place on a baking sheet and bake for 20-25 minutes or until golden brown.

Meat Pies

    Prepare the Filling

    In a skillet, cook ground beef and pork with onion and garlic until browned. Add Cajun seasoning and stir well. Let it cool.

    Assemble the Pies

Boudin Balls

    Mix Ingredients

    In a bowl, combine boudin sausage, cooked rice, green onions, and beaten egg. Mix until well combined.

    Form the Balls

    Shape the mixture into small balls and roll in breadcrumbs.

    Fry

    In a deep pan, heat oil over medium heat. Fry the boudin balls until golden brown, about 3-5 minutes. Drain on paper towels.
