Prepare the Stuffed Shrimp
In a bowl, combine the cream cheese, chopped green onions, minced garlic, and half of the crawfish tails. Mix well. Carefully stuff each shrimp with the mixture and set aside.

Cook the Crawfish Etouffee
In a large skillet, melt 2 tablespoons of butter over medium heat. Stir in the flour and cook for about 2 minutes until golden. Gradually add the chicken stock, stirring continuously until thickened. Stir in the remaining crawfish tails and cajun seasoning. Simmer for 10 minutes.

Prepare the Dirty Rice
Prepare the dirty rice according to package instructions or your preferred recipe.

Serve the Dish
To serve, place a portion of dirty rice on a plate, top with the stuffed shrimp, and generously ladle the crawfish etouffee over the shrimp.
