Prepare the Cajun Mayo
In a small bowl, mix together the mayonnaise and cajun seasoning until well combined. Set aside.

Fry the Green Tomatoes
Dip each slice of green tomato in buttermilk, then dredge in cornmeal. Heat oil in a skillet over medium heat and fry the tomatoes until golden brown on both sides. Drain on paper towels.

Cook the Bacon
In the same skillet, cook the bacon until crispy. Remove and drain on paper towels.

Blacken the Shrimp
Toss the shrimp with blackening seasoning. In the hot skillet, cook the shrimp for about 2-3 minutes on each side until they are opaque and cooked through.

Assemble the BLT
On each piece of po-boy bread, layer the fried green tomatoes, bacon, lettuce, and blackened shrimp. Drizzle with cajun mayo and close the sandwich. Serve immediately.
