Preparation Instructions

  1. 1

    Sauté Vegetables

In a skillet, heat the olive oil over medium heat. Add the sliced onions and sauté for about 3-4 minutes until they start to soften. Then add the sliced mushrooms and continue to cook for another 5-7 minutes, until both the mushrooms and onions are cooked through. Season with salt and pepper to taste.

  2. 2

    Combine Ingredients

Once the mushrooms and onions are cooked, add the sliced roast beef to the skillet. Stir to combine and heat through for about 2-3 minutes.

  3. 3

    Assemble Sandwich

Cut the po-boy bread or sub rolls open. Place the beef, mushroom, and onion mixture evenly inside each roll. Top with slices of provolone cheese.

  4. 4

    Melt Cheese

If desired, place the assembled sandwiches under a broiler for 1-2 minutes to melt the cheese and lightly toast the bread.

  5. 5

    Serve

Remove from the oven, let cool for a minute, then slice in half and serve hot.
