    Prepare the Alligator

    Marinate the alligator meat in buttermilk for at least 1 hour in the refrigerator.

    Set Up Breading Station

    In one bowl, combine cornmeal, flour, Cajun seasoning, salt, and black pepper. Mix well.

    Bread the Alligator

    Remove the alligator from the buttermilk and let excess drip off. Dredge each piece in the cornmeal mixture until well coated.

    Heat the Oil

    In a large skillet or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Alligator

    Carefully add the breaded alligator strips to the hot oil in batches. Fry for about 3-4 minutes or until golden brown and cooked through. Remove and drain on paper towels.

    Assemble the Poboy

    Slice the po-boy bread lengthwise. Spread a generous amount of tartar sauce on the inside. Layer with fried alligator, shredded lettuce, and sliced tomato.

    Close the sandwich and serve immediately while hot.
