Method
Classic Mimosa (Orange Juice)
Chill
Place the Champagne or sparkling wine and orange juice in the refrigerator for at least 2 hours before serving so both are well chilled.
Prepare Glasses
If serving individually, chill flutes in the fridge or briefly in an ice bath. For a pitcher, add ice to the pitcher now if desired.
Fill each chilled Champagne flute about halfway with chilled sparkling wine (approximately 3 to 4 ounces / 90–120 ml, depending on flute size).
Top the sparkling wine with an equal amount of chilled orange juice (approximately 3 to 4 ounces / 90–120 ml). Pour gently to preserve bubbles and avoid overflowing.
Garnish each glass with an orange slice or twist on the rim. Serve immediately while bubbly.
Cranberry Mimosa (variation)
Chill
Chill the sparkling wine and cranberry juice for at least 2 hours before serving.
Taste the cranberry juice. If it is very tart and you prefer a sweeter drink, stir in up to 1 teaspoon of simple syrup into the juice and taste again.
Pour the chilled sparkling wine into a chilled Champagne flute about halfway (3 to 4 ounces / 90–120 ml).
Top with an equal amount of chilled cranberry juice, pouring gently to retain bubbles.
Garnish with a lime twist or a few fresh cranberries on a pick. Serve immediately.
