Prepare eggs

Crack the 4 large eggs into a bowl. Add the 1 cup egg whites (if using), 1 tsp salt and 1/2 tsp black pepper. Whisk until combined and slightly frothy, about 30 seconds.

Cook eggs

Heat 1 tablespoon olive oil or butter in a nonstick skillet over medium heat. Pour the whisked eggs into the skillet and let sit 10–15 seconds, then gently stir with a spatula, pushing cooked edges to the center. Cook until mostly set but still moist, about 2–3 minutes. Remove from heat — the eggs will finish setting from residual heat.

Warm turkey

If using cold turkey/chicken, briefly warm it in the same skillet for 30–45 seconds until heated through. Remove and set aside.

Vegetables & Herbs

Quickly sauté spinach and peppers in the skillet for 20–30 seconds until spinach wilts and peppers soften slightly. Add cherry tomatoes only to warm through (10–15 seconds) so they retain texture. Stir in sliced scallions and chopped parsley or cilantro, then remove vegetables to a plate.

Cheese & Spread

Spread 1 tablespoon light cream cheese or 1 tablespoon Greek yogurt evenly over each tortilla. If desired, stir 1 teaspoon hot sauce or salsa into the spread before applying for a flavor variation. Sprinkle 2 tablespoons (0.25 cup total) shredded cheese across each tortilla so it will melt slightly from the warm eggs and fillings.

Wrap Assembly & Finishing

Lay the prepared tortillas flat. Divide the warmed eggs evenly between the two tortillas, placing them down the center. Top each with half of the warmed turkey, sautéed spinach/peppers/tomatoes, and optional 1/4 avocado each. Squeeze 1/4 teaspoon lemon juice over each filling if using.

Fold the sides of the tortilla in, then roll from the bottom up tightly to create a wrap. Place seam-side down on the skillet over low heat for 30–45 seconds per side to seal and lightly toast, pressing gently with a spatula.

Slice each wrap in half on the diagonal and serve immediately. For weekly rotating flavors: swap turkey for smoked salmon, use feta and dill, or swap bell pepper for sautéed mushrooms and add a pinch of smoked paprika to eggs.
