Warm tortillas

Lightly brush both sides of each tortilla with half of the olive oil (about 1/2 tbs per tortilla). Heat a large nonstick skillet over medium heat. Warm each tortilla 20–30 seconds per side until pliable and lightly golden. Remove and keep warm wrapped in a clean towel.

Make scrambled eggs

Crack the eggs into a bowl, add the milk, salt, and pepper. Whisk vigorously until homogenous and slightly frothy. Heat the same skillet over medium-low and add remaining olive oil if needed. Pour eggs into the skillet and let sit 10–15 seconds, then gently stir with a silicone spatula, scraping the pan and folding eggs until soft-curd scrambled, about 2–3 minutes. Remove from heat when slightly underdone (carryover will finish cooking). Stir in grated Parmesan and chopped basil.

Prepare fillings

If using prosciutto, separate slices so they lay flat. Briefly wilt the baby spinach in the still-warm skillet for 15–20 seconds until just softened, then transfer to a plate. Warm the sun-dried tomatoes and roasted red peppers together in the skillet 30–45 seconds to release aroma.

Assemble wraps

Lay a warm tortilla flat. Spread 1 tablespoon of pesto down the center of each tortilla. Place half of the scrambled egg mixture over the pesto in a line. Top with 2 slices of prosciutto (or Italian turkey), 1/4 cup wilted spinach, 2 tablespoons sun-dried tomatoes, 2 tablespoons roasted red peppers, and 1/4 cup mozzarella. Sprinkle a pinch of red pepper flakes if desired.

Roll and finish

Fold the sides of the tortilla over the filling and roll tightly from one end to the other to form a wrap. Place seam-side down on the warm skillet and press lightly with a spatula or weight. Toast 1–2 minutes per side over medium heat until golden and cheese begins to melt. Remove and let rest 1 minute, then slice in half on the diagonal.

Serve immediately with extra pesto or hot sauce on the side. Each wrap serves one; store leftovers wrapped in foil and refrigerate up to 24 hours. Reheat in a skillet or sandwich press until warmed through.
