Sweeten and flavor yogurt

In a medium bowl, whisk together 2 cups Greek yogurt, 1 tsp vanilla extract and 2 tablespoons honey (or maple syrup) until smooth and evenly flavored. Taste and adjust sweetness as desired. Chill while you finish the granola and prepare berries.

Almond Granola (house-made)

Preheat and combine dry ingredients

Preheat oven to 325°F (160°C). Line a rimmed baking sheet with parchment paper. In a large bowl, combine 2 cups rolled oats, 1 cup roughly chopped almonds, 1 tablespoon shredded coconut (if using), 3 tablespoons seeds, 2 tablespoons brown sugar, 1 teaspoon ground cinnamon and 1 teaspoon salt; stir until evenly distributed.

Add wet ingredients and mix

Add 3 tablespoons maple syrup and 2 tablespoons oil to the dry mix. Stir thoroughly so the oats and nuts are evenly coated and the mixture clumps slightly.

Bake until golden

Spread the granola in an even layer on the prepared baking sheet. Bake for 15 minutes, then stir (turning the granola) and flatten back into a single layer. Continue baking for another 8–12 minutes, watching closely, until edges are fragrant and golden-brown. Total bake time ~23–27 minutes depending on oven and thickness.

Cool and finish

Remove the baking sheet and let the granola cool completely on the sheet — it will crisp up as it cools. Break into bite-sized clusters. Taste and adjust with a pinch more salt or a tablespoon of honey if you want sweeter clusters. Store in an airtight container for up to 2 weeks.

Berries & Assembly

Prepare berries

Rinse all berries gently and drain well. Hull and halve strawberries; leave blueberries and raspberries whole. Pat dry with a paper towel to remove excess moisture.

Assemble bowls

Divide the sweetened vanilla Greek yogurt between 4 serving bowls (about 1/2 cup yogurt per serving). Spoon 1/3 to 1/2 cup house-made almond granola over the yogurt in each bowl (adjust to preference). Top each bowl with a mixed portion of the prepared berries (about 3/4 cup total berries per serving).

Garnish and serve

Drizzle each bowl with about 1/4 teaspoon to 1 tablespoon extra honey or maple syrup to taste. Garnish with a small mint leaf or two. Serve immediately so the granola remains crunchy.
