Preheat and prepare

Preheat the oven to 325°F (165°C). Line a large rimmed baking sheet with parchment paper or a silicone mat.

In a large mixing bowl combine the rolled oats, chopped almonds, pumpkin seeds and shredded coconut. Stir to distribute evenly.

In a medium bowl or measuring cup whisk together the maple syrup, oil, vanilla extract, honey (if using) and cinnamon until smooth. Add the sea salt and whisk briefly.

Pour the wet mixture over the dry mixture. Use a spatula to fold and coat everything evenly so the oats and nuts are well glazed. Taste a bit of the mixture and adjust salt or sweetness if needed.

Spread the coated granola in an even layer on the prepared baking sheet, pressing lightly with the spatula so some clusters form.

Bake for 18–22 minutes, rotating the pan once halfway through for even browning. Watch closely the last 5 minutes to avoid burning; granola should be golden but not dark brown.

Remove from oven and let cool completely on the pan — it will crisp up as it cools. If you want larger clusters, press down gently with a spatula as it cools. Stir in dried fruit (if using) once cooled so it doesn't bake or harden.

Transfer cooled granola to an airtight container. Store at room temperature up to 2 weeks, or freeze for up to 3 months.

Assembly (per 4 servings)

If using whole strawberries, hull and slice them. Rinse all berries and gently pat dry. If berries are very sweet or tart, toss lightly with lemon zest and 1–2 tablespoons honey or maple syrup to taste.

Divide the vanilla Greek yogurt evenly among four bowls or glasses (about 1 cup each). Smooth the top with the back of a spoon.

Spoon 3/4 to 1 cup of granola over each portion of yogurt, depending on how much crunch you like.

Top each with an even portion of fresh seasonal berries (about 1/2 cup per serving) and a sprinkle of lemon zest if using.

Garnish with two fresh mint leaves per bowl, and drizzle a little extra honey or maple syrup on top if desired.

Serve immediately so the granola remains crisp. Leftover granola can be stored separately and added just before serving.
