Prepare the Gnocchi

Mash the Potatoes
Peel the potatoes and mash them in a large mixing bowl until smooth.

Shape the Gnocchi
Divide the dough into smaller pieces. Roll each piece into a long rope and cut into bite-sized pieces. Optionally, use a fork to create ridges.
Cook the Vegetables

Chop the Vegetables
Dice the zucchini, bell pepper, and carrot into small pieces.

Sauté the Vegetables
In a large skillet, heat a tablespoon of butter over medium heat. Add the chopped vegetables and sauté for about 5-7 minutes until tender. Stir in the spinach and cook until wilted.
Prepare the Sauce

Make the White Wine Sauce
In the same skillet used for the vegetables, add the remaining butter and white wine. Cook until the wine reduces by half, about 3-4 minutes.

Add Lemon Juice
Stir in lemon juice, salt, and black pepper to the sauce. Adjust seasoning to taste.
Combine and Serve

Cook the Gnocchi
In a pot of boiling salted water, cook the gnocchi until they float to the surface, about 2-3 minutes. Remove and drain.

Mix Everything Together
Add the cooked gnocchi to the skillet with the sauce and vegetables. Toss gently to combine.

Serve the vegetable gnocchi warm, garnished with additional black pepper if desired.
