Steak Preparation

    Season the Steak

    Sprinkle the beef flatiron steak generously with salt and black pepper on both sides.

    Cook the Steak

    In a large skillet, heat the olive oil over medium-high heat. Add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from the skillet and let it rest for 5 minutes before slicing.

Pommes Frites Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Rinse them under cold water and pat them dry with a towel.

    Fry the Potatoes

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry the potato strips in batches for about 4-5 minutes until golden and crispy. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt immediately.

    Prepare the Vegetables

    Trim the ends of the asparagus and peel the carrots. Cut the carrots into sticks.

    In a large skillet, heat the olive oil over medium heat. Add the asparagus and carrots, season with salt and black pepper, and sauté for about 5-7 minutes until tender-crisp.

Truffle-Tarragon Ailoi Preparation

    Mix the Ailoi

    In a bowl, combine the mayonnaise, truffle oil, chopped tarragon, minced garlic, and lemon juice. Mix well until smooth and creamy. Adjust seasoning with salt if needed.
