    Cook Quinoa

    Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed. Fluff with a fork and set aside.

    Prepare Vegetables

    While the quinoa is cooking, wash and chop the zucchini, bell peppers, cherry tomatoes, and red onion into bite-sized pieces. Set aside.

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Chopped Vegetables

    Add the chopped zucchini, bell peppers, and red onion to the skillet. Sauté for 5-7 minutes until vegetables are tender.

    Incorporate Spinach

    Add 2 cups of spinach to the skillet and cook until wilted, about 2-3 minutes. Season the mixture with 1 teaspoon of dried oregano, salt, and black pepper to taste.

Serving

    Combine and Serve

    In a large bowl, combine the cooked quinoa with the sautéed vegetable mixture. Toss gently to combine. Serve warm, topped with crumbled feta cheese and a drizzle of balsamic glaze, if desired.
