Method

Preparation

  1. 1

    Prep the Seafood

Rinse the fresh fish fillets, shrimp, mussels, and squid under cold water. Pat dry with paper towels and set aside.

  2. 2

    Chop Vegetables

Halve the cherry tomatoes, mince the garlic, and chop the fresh basil. Zest and juice the lemon.

  3. 3

    Gather Seasonings

Measure out the olive oil, salt, black pepper, and white wine (if using) and have them ready for cooking.

Cooking

  1. 4

    Sauté Garlic and Tomatoes

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Then add the halved cherry tomatoes and cook for another 3-4 minutes until they start to soften.

  2. 5

    Add Seafood

Add the fish fillets to the skillet first, cooking for 3-4 minutes on each side until they are golden brown. Add the shrimp, mussels, and squid to the skillet, stirring gently to combine all the ingredients.

  3. 6

    Add Seasonings

Sprinkle the salt and black pepper over the seafood. If using, pour in the white wine and bring the mixture to a gentle simmer. Cover the skillet and cook for an additional 5-7 minutes until the mussels have opened and the shrimp are pink.

  4. 7

    Finish with Lemon and Basil

Remove the skillet from heat. Stir in the lemon juice and zest, and fold in the chopped basil. Adjust seasoning to taste.
