    Rinse 1 cup of quinoa under cold water. Combine with 2 cups of water in a pot, bring to a boil, then reduce to a simmer. Cook for 15 minutes or until water is absorbed. Remove from heat and let sit for 5 minutes before fluffing with a fork.

    Dice the zucchini, bell peppers, and carrots into bite-sized pieces. Halve the cherry tomatoes and set aside. Rinse the spinach and pat dry.

    Press the tofu block to remove excess moisture. Cut into cubes and set aside.

    In the skillet with vegetables, add the cooked quinoa and sautéed tofu. Drizzle with lemon juice and toss everything together until well combined. Adjust seasoning if necessary.
