Mashing

    Prepare the Mash

    In a large mash tun, combine the Pale Ale Malt, Crystal Malt, Munich Malt, and Flaked Oats. Add 6 gallons of water heated to 165°F and stir to ensure all grains are wet.

    Mash Rest

    Allow the mash to rest for 60 minutes at 152°F, stirring occasionally to maintain temperature.

    Sparge

    After the mash rest, sparge the grains with hot water to collect enough wort, approximately 6 gallons.

Boiling

    Boil the Wort

    Bring the collected wort to a vigorous boil.

    Add Hops

    Once boiling, add the Cascade hops and boil for 60 minutes. Add Centennial hops with 15 minutes left in the boil and Amarillo hops with 5 minutes left.

    Cool the Wort

    After the boil, cool the wort quickly to below 70°F using a wort chiller.

Fermentation

    Pitch Yeast

    Transfer the cooled wort to a sanitized fermenter and pitch the American Ale yeast.

    Fermentation

    Seal the fermenter and allow it to ferment at 68-72°F for about 2 weeks until fermentation activity has ceased.

Flavoring

    Add Adjuncts

    After fermentation, add the pumpkin puree, cinnamon, nutmeg, and vanilla extract to the fermenter and gently stir to combine.

    Condition

    Let the beer condition for another week to allow flavors to meld.

Bottling

    Bottle the Beer

    After conditioning, bottle the beer using sanitized bottles and caps. Ensure to add priming sugar if carbonation is needed.

    Age

    Allow the bottled beer to carbonate at room temperature for 1-2 weeks before refrigerating.
