Mussels Preparation

    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells with a brush to remove any dirt. Discard any mussels that are open and do not close when tapped.

    Sauté Garlic

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic (4 cloves) and sauté for about 1-2 minutes until fragrant but not browned.

    Add Tomatoes and Vermouth

    Stir in the diced tomatoes and dry vermouth. Season with salt and black pepper to taste. Bring the mixture to a simmer.

    Cook the Mussels

    Add the cleaned mussels to the pot. Cover and cook for about 5-7 minutes, or until the mussels have opened. Discard any that remain closed.

    Add Basil

    Once the mussels are cooked, stir in the fresh basil leaves and remove from heat.

Grilling Bread

    Prepare the Bread

    Slice the ciabatta loaf in half lengthwise. Brush both cut sides with 2 tablespoons of olive oil and sprinkle with garlic powder.

    Grill the Bread

    Preheat a grill or grill pan over medium-high heat. Place the bread cut-side down on the grill and toast for about 2-3 minutes, or until golden brown and crisp.

    Serve

    Remove the grilled bread from the grill and serve alongside the mussels.
