Preparing the Brussels Sprouts

Preheat the Oven
Preheat your oven to 400°F (200°C) to prepare for roasting the Brussels sprouts.

Trim and Halve the Brussels Sprouts
Rinse the Brussels sprouts under cold water. Trim the ends and remove any yellow or damaged outer leaves. Cut each Brussels sprout in half lengthwise.

Season the Brussels Sprouts
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated.

Roast the Brussels Sprouts
Spread the seasoned Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, stirring halfway through.
Making the Honey-Dijon Dressing

Combine Ingredients
In a small bowl, whisk together the honey, Dijon mustard, apple cider vinegar, and olive oil until smooth and well combined.
Serving the Dish

Prepare the Garnish
While the Brussels sprouts are roasting, chop the apple into small cubes and set aside. Toast the pepitas in a dry skillet over medium heat for 3-5 minutes until they are golden and fragrant.

Combine and Serve
Once the Brussels sprouts are roasted, remove them from the oven and transfer to a serving dish. Drizzle the honey-Dijon dressing over the Brussels sprouts. Top with chopped apple and toasted pepitas. Serve warm.
