Preparation

    Prepare the Clams

    Rinse the fresh clams under cold water to remove any sand or debris. Soak them in a bowl of fresh water for 30 minutes to help expel any remaining grit.

    Cook the Bacon

    In a large pot over medium heat, add the bacon slices. Cook until crispy, about 5-7 minutes. Remove the bacon from the pot and set aside on a paper towel to drain. Leave the bacon grease in the pot.

    Sauté the Vegetables

    In the same pot with the bacon grease, add the chopped onion, celery, and minced garlic. Sauté for about 5 minutes or until the onion is translucent.

    Add the Potatoes and Broth

    Stir in the diced potatoes, chicken broth, thyme, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes or until the potatoes are tender.

Cooking

    Add the Clams

    After the potatoes are tender, add the prepared clams to the pot. Simmer for an additional 10 minutes or until the clams have opened. Discard any clams that remain closed.

    Stir in the Cream

    Pour in the heavy cream and stir to combine. Let the chowder simmer for another 5 minutes, allowing the flavors to meld.

    Serve

    Ladle the clam chowder into bowls. Crumble the cooked bacon on top, and garnish with chopped parsley. Serve with Westminster Bakers Co. oyster crackers on the side.
