Burger Patty Preparation

Form the Patties
In a bowl, gently mix the wagyu beef with kosher salt and freshly ground black pepper. Divide the mixture into two equal portions and form each into a round patty about 1 inch thick.

Toast the Buns
Lightly toast the burger buns on the grill or in the oven until golden brown.

Assemble the Burger
On the bottom half of each bun, spread either the vino special sauce or the chef's bacon jam. Place the cooked patty on top, followed by layers of lettuce, sliced tomatoes, onions, and a generous amount of arugula. Top with cambozola cheese if desired, and finish with the top half of the bun.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick.

While the frites are still hot, sprinkle with kosher salt to taste.
