Prepare the Dates
Preheat your oven to 400°F (200°C). Use a sharp knife to make a small slit in each Medjool date and carefully remove the pit. Be gentle to avoid breaking the date.

Stuff the Dates
Take a small piece of blue cheese (about 5 grams) and stuff it into each date where the pit was removed. Press the sides of the date together to seal in the cheese.

Wrap the Dates
Cut each slice of applewood smoked bacon in half. Wrap each stuffed date with a half slice of bacon, securing it with a toothpick if necessary.
Cooking

Bake the Wrapped Dates
Place the bacon-wrapped dates on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the bacon is crispy and golden.

Drizzle with Balsamic Glaze
Once cooked, remove the dates from the oven and let them cool for a couple of minutes. Drizzle the balsamic glaze over the warm dates before serving.
