Prepare the Seafood
In a large pot, bring salted water to a boil. Add shrimp, calamari, mussels, and octopus. Cook for about 3-5 minutes or until shrimp turns pink and mussels open. Drain and let cool.
Combine Ingredients
In a large mixing bowl, combine the cooled seafood, cherry tomatoes, cucumber, red onion, and parsley.
Dress the Salad
Drizzle olive oil and lemon juice over the salad. Season with salt and black pepper, then toss gently to combine.
Serve
Chill in the refrigerator for at least 30 minutes before serving. Serve cold and enjoy your Insalata di Mare!
