Soak (optional)
If you have time and want crispier potatoes, place the cut potatoes in cold water for 20 minutes to remove excess starch. Drain and pat completely dry with a kitchen towel or paper towels.
Chop aromatics
Peel and cut the yellow onion into 1/2-inch dice. Core, seed and cut the green bell pepper into 1/2-inch pieces. Mince the garlic cloves.

Heat fat
Place a large heavy skillet or cast-iron pan over medium-high heat. Add 2 tablespoons vegetable oil and 1 tablespoon unsalted butter. Heat until butter melts and oil shimmers but does not smoke.
Brown potatoes
Add the dried, cubed potatoes in a single layer as much as possible (work in two batches if needed). Let them cook undisturbed for 4–5 minutes to develop a golden crust, then toss or flip pieces and continue to cook another 4–6 minutes, stirring occasionally, until most pieces are golden-brown and tender when pierced with a fork. Reduce heat to medium if they begin to burn.
Add aromatics & spices
Push the potatoes to one side of the pan, add the diced onion and bell pepper to the empty space and cook 3–4 minutes until softened and slightly caramelized. Add the minced garlic and cook 30–45 seconds until fragrant. Combine everything in the pan, then sprinkle paprika, ground cumin, dried thyme, salt, black pepper, and red pepper flakes evenly over the potatoes and vegetables. Toss to coat and cook 1–2 minutes to bloom the spices.
Finish & Garnish
Serve hot as a breakfast side, brunch item, or alongside grilled meats. Leftovers refrigerate in an airtight container for up to 3 days and reheat in a skillet to restore crispness.
