Pat the shrimp dry with paper towels. This removes surface moisture and helps them sear rather than steam.
Cook
Heat a large skillet over medium-high heat until hot. Add the olive oil and swirl to coat. Add the seasoned shrimp in a single layer (do not overcrowd; cook in batches if necessary). Sear for 1.5–2 minutes on the first side without moving, until pink at the edges and golden underneath. Flip and cook another 1–1.5 minutes until opaque and just cooked through (internal temperature ~120–125°F for carryover to reach 135°F).
Finish
Reduce heat to medium, add the butter to the pan and let it melt. Spoon the melted butter over the shrimp for 10–15 seconds, then remove the pan from the heat. Stir in lemon juice, chopped parsley, and red pepper flakes if using. Toss to coat and transfer the shrimp to a small dish or serve directly as the add-on.
Taste and adjust seasoning with a pinch more salt or a squeeze of lemon if desired. Serve immediately as an add-on portion alongside the main dish.
