Eggplant Purée

    Roast the eggplants

    Preheat oven to 450°F (230°C). Line a baking sheet with foil. Using a fork, prick eggplants in several places to prevent bursting. Lightly brush or rub eggplants with 2 tbs olive oil and sprinkle with 1 tsp salt. Place on the baking sheet and roast for 35–45 minutes, turning every 10–12 minutes, until the skins are charred and the flesh is very soft and collapsed. Alternatively, char the eggplants directly over a gas flame or on a grill for 10–15 minutes, turning until evenly blackened and soft.

    Drain and cool

    Remove eggplants from the oven and transfer to a bowl. Cover with plastic wrap or place in a sealed container for 10–15 minutes to sweat — this makes peeling easier and reduces excess moisture. When cool enough to handle, slice off the stem, split open, and scoop the flesh into a fine-mesh sieve set over a bowl. Let drain for 10 minutes, pressing lightly to remove excess liquid. Discard liquid and any tough skins.

    Combine with seasonings

    Transfer drained eggplant flesh to a medium mixing bowl. Mash with a fork or use a food processor for a smoother texture. Add 2–4 tbs tahini (start with 2 and add up to 4 to taste), 3 tbs fresh lemon juice, 2 garlic cloves (minced or grated), 1 tsp ground cumin, 1/2 tsp black pepper and a pinch of salt if needed. If the purée seems too thick, add up to 2 tbs cold water, 1 tbs at a time, until desired creaminess is reached.

    Adjust and chill

    Taste and adjust: more lemon for brightness, more tahini for creaminess, or salt to season. For a smoother, silkier babaghanouj, run the mixture through a food processor for 30–60 seconds. Refrigerate for at least 30 minutes to let flavors meld (optional).

Topping & Garnish

    Prepare vegetables: While eggplant cools or chills, seed and dice the tomato and cucumber into small uniform pieces. Finely dice the red onion and chop the parsley. Place vegetables in a small bowl and toss gently to combine. If using pomegranate seeds, have them ready.

    Assemble the dish: Spread the eggplant purée onto a shallow serving plate, creating a slight well in the center. Drizzle 1–2 tbs extra-virgin olive oil over the top. Spoon the diced vegetable mixture into the well or scatter across one side for contrast.

    Finish and serve: Sprinkle chopped parsley and pomegranate seeds over the top (if using). Dust lightly with 1/2 tsp smoked paprika or sumac for color and a slight tang. Drizzle an additional 1 tbs olive oil if desired. Serve with warm pita, flatbread, or crisp vegetables.
