    Prepare tomatoes

    Wash and core the tomatoes. Cut into bite-sized wedges (about 1–1.5 inch pieces). Place in a large salad bowl.

    Prepare cucumber

    Peel the cucumber if the skin is thick or waxed; otherwise leave skin on. Cut cucumber lengthwise if large, remove seeds if very watery, then slice into 1/4-inch half-moons. Add to bowl with tomatoes.

    Slice onion

    Peel the red onion and cut in half from pole to pole. Slice thinly into half-moons. If you prefer a milder onion flavor, soak the slices in cold water for 5 minutes, then drain and pat dry. Add to the bowl.

    Prepare pepper

    Core and seed the green bell pepper, then cut into thin strips or 1/2-inch pieces. Add to the bowl.

    Add olives and parsley

    Pit the Kalamata olives if not already pitted (or roughly halve them). Chop the parsley leaves finely. Add olives and parsley to the vegetables.

    Add feta

    Crumble or cut the feta into 1/2-inch cubes and add them to the bowl. Reserve a small amount (about 1 tbsp) for garnish if desired.

Dressing

    Mince garlic

    Peel and very finely mince the garlic clove (or grate on a microplane).

    Combine dressing ingredients

    In a small bowl or jar, whisk together the extra-virgin olive oil, red wine vinegar, fresh lemon juice, minced garlic, dried oregano, sea salt, and black pepper until fully emulsified. Taste and adjust salt/acid to preference.

    Dress the salad

    Pour about three-quarters of the dressing over the salad and gently toss with two large spoons or hands until all vegetables are lightly coated. Let sit for 2–3 minutes to allow flavors to meld, then taste and add more dressing if desired.

    Finish and serve

    Transfer salad to a serving bowl or platter. Scatter the reserved feta over the top as a garnish and drizzle any remaining dressing. Serve immediately at room temperature or slightly chilled.
