    Prepare

    Preheat oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan or line with parchment. Toast pecans lightly on a baking sheet at 325°F for 6–8 minutes if not already toasted; set aside to cool.

    In a medium bowl whisk together flour, baking powder and salt; set aside.

    In the bowl of a stand mixer (or large bowl with hand mixer), cream the softened butter and granulated sugar on medium speed until pale and fluffy, about 3–4 minutes.

    Add eggs one at a time, mixing until incorporated, then add vanilla.

    With the mixer on low, add the dry ingredients in three additions alternating with the milk (dry, milk, dry, milk, dry), mixing until just combined after each addition. Do not overmix.

    Pour batter into the prepared 9-inch pan and smooth the top with a spatula. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Remove from oven and cool in pan for 10 minutes, then invert onto a wire rack and cool completely.

Caramel layer

    If using store-bought soft caramels: place caramels and 3 tablespoons heavy cream in a small, microwave-safe bowl. Microwave in 20–30 second intervals, stirring between each, until smooth and pourable (about 1–1.5 minutes total). If using dulce de leche, warm slightly to loosen for easier spreading.

    Once the cake is completely cool, place it on a serving plate. Spoon the warm caramel over the top of the cake and use a spatula to spread it evenly, leaving the edges visible so caramel drips can form. Allow the caramel to set slightly (5–10 minutes) before proceeding.

Chocolate ganache

    Place the chocolate chips in a heatproof bowl. Heat 1/2 cup heavy cream in a small saucepan until it just begins to simmer (do not boil). Pour the hot cream over the chocolate chips and let sit for 2 minutes to soften the chocolate.

    Stir gently until smooth and glossy. If desired, stir in 1 tablespoon unsalted butter for extra shine and richness. Let the ganache cool for 3–5 minutes until slightly thickened but still pourable.

    Pour the ganache over the caramel layer, starting at the center and moving outward so it drips over the sides. Use an offset spatula to encourage smooth coverage. Allow ganache to set at room temperature for about 20–30 minutes (or refrigerate 10–15 minutes) until firm to the touch but not rock hard.

Pecans (optional candied)

    For plain toasted pecans: scatter the toasted pecan halves over the top of the ganache in an even layer or arrange decoratively.

    For candied pecans: in a small skillet, melt 1 teaspoon butter over medium heat, add 2 tablespoons brown sugar and stir until sugar melts and bubbles. Add pecan halves and toss to coat for 1–2 minutes until glossy. Spread candied pecans on parchment to cool slightly, then place on the cake.

Finishing & serving

    If desired, dust the cake lightly with 1 tablespoon powdered sugar and sprinkle a pinch of salt over the ganache to enhance flavors (especially useful if the caramel is very sweet).
