    Mix base spirits and modifiers

    Add 2 oz gin, 0.5 oz dry vermouth, 0.5 oz Lillet Blanc, 0.5 oz fresh lemon juice, 0.25 oz simple syrup, and 2 dashes orange bitters into a cocktail shaker.

    Add ice and shake

    Fill the shaker with ice to at least three-quarters full. Secure the lid and shake vigorously for 12–15 seconds, until the shaker is very cold to the touch and properly diluted.

    Strain

    Double-strain the mixture into a chilled coupe or Nick & Nora glass using a Hawthorne/strainer and a fine mesh strainer to remove small ice chips and pulp.

    Top with sparkling wine

    Carefully top the strained cocktail with 2 oz chilled Champagne or other dry sparkling wine (such as a Serillon Cellars–style bubbly). Pour slowly to preserve effervescence.

Garnish & serve

    Express a lemon twist over the surface of the drink by holding the twist (peel side down) and giving it a quick, sharp bend to release the oils. Run the twist around the rim of the glass and drop it into the drink as a garnish.

    Serve immediately while the sparkling wine is lively. Provide a small spoon or napkin if desired. The drink should serve one.
