    Trim the rhubarb stalks and cut into 1/2-inch pieces so they cook evenly. Measure 3 cups.

    Combine rhubarb, 2 tablespoons granulated sugar, 2 tablespoons water, 1 tablespoon lemon juice, and 1 teaspoon lemon zest in a medium saucepan over medium heat.

    Bring the mixture to a gentle simmer, stirring to dissolve the sugar. Once simmering, reduce heat to low and cook, uncovered, for 6–10 minutes, stirring occasionally, until the rhubarb has softened and pieces have started to break down but still retain some shape. If the mixture becomes too dry, add up to 1–2 tablespoons water.

    Stir in 1 teaspoon vanilla extract, taste, and adjust sweetness with up to 1 more tablespoon sugar if desired. Remove from heat and set aside to cool slightly while you make the brown butter.

    Clarify and brown butter

    Use a light-colored stainless steel or copper skillet (so you can see color changes). Cut 8 tablespoons unsalted butter into even pieces and place in the skillet over medium heat.

    Allow the butter to melt completely, then foam up. Swirl the pan occasionally (or stir gently with a heatproof spatula) to cook evenly. After the foam subsides, small brown milk solids will begin to form on the bottom; watch closely — this can go from browned to burnt quickly. Total time is typically 5–7 minutes.

    When the butter smells nutty and you see golden-brown flecks, immediately remove the pan from the heat to prevent burning. Add 1 teaspoon fine sea salt and stir to incorporate.

    If you prefer a clear brown butter without solids, strain the butter through a fine-mesh sieve or cheesecloth into a heatproof bowl. Otherwise leave solids in for extra texture and flavor.

Finish & Serving

    Spoon the warm rhubarb compote into a serving bowl or individual dishes.

    Drizzle the brown butter over the rhubarb while both are warm so the flavors meld. Start with 2–3 tablespoons brown butter and add more to taste. If you reserved solids and want a smoother presentation, spoon strained brown butter.
