    Place a medium skillet (preferably stainless steel) over medium heat. Add 6 tablespoons unsalted butter. Melt and continue cooking, swirling the pan or stirring frequently, until the butter foams, the milk solids turn golden-brown and you smell a nutty aroma, about 5–7 minutes. Immediately remove from heat to stop browning and transfer the brown butter to a heatproof bowl to cool slightly, reserving any browned bits in the pan.

    Combine pumpkin and sweeteners

    While the butter is cooling slightly, in a medium mixing bowl combine 1 cup canned pumpkin puree, 1 cup brown sugar, and 2 tablespoons maple syrup. Whisk until smooth and the sugar begins to dissolve.

    Emulsify butter into pumpkin

    Slowly pour the warm (not piping hot) brown butter into the pumpkin-sugar mixture while whisking continuously so the butter emulsifies into the puree. This creates a glossy, rich pumpkin-butter mixture. Add 1 teaspoon vanilla extract and whisk to combine.

    Add the spices and salt to the pumpkin mixture: 2 teaspoons ground cinnamon, 1/2 teaspoon ground nutmeg, 1/2 teaspoon ground ginger, 1/4 teaspoon ground cloves, and 3/4 teaspoon fine sea salt. Stir thoroughly until spices are evenly distributed and the mixture is homogeneous. Taste and adjust seasoning: add an extra 1/4 teaspoon cinnamon or a pinch more salt if desired.

    If the mixture feels too thick for your intended use (spread, dip, or filling), thin it by whisking in up to 2 tablespoons heavy cream (or coconut cream for dairy-free) a teaspoon at a time until you reach the desired consistency.
