Preheat and prepare pan
Preheat the oven to 350°F (175°C). Grease a 9x9-inch (or 8x8-inch) square baking pan and line the bottom with parchment paper or lightly flour the pan.

Whisk dry ingredients
In a medium bowl, whisk together 1 cup all-purpose flour, 1 tsp baking powder, and 1 tsp salt. Set aside.

Beat eggs and sugar
In a large mixing bowl, use a mixer to beat 5 large eggs and 1 cup granulated sugar on high speed for 6–8 minutes, until the mixture is thick, pale, and has tripled slightly in volume (ribbon stage). This aerated base is key for a light tres leches sponge.

Add flavor and butter
Beat in 1 tsp vanilla extract. Fold in the dry ingredients in two additions using a rubber spatula, gently incorporating to keep as much air as possible. Fold in 3 tablespoons melted, cooled unsalted butter and 1/4 cup warm whole milk until just combined and no streaks of flour remain.

While the cake bakes or cools, whisk together 1 cup sweetened condensed milk, 1 cup evaporated milk, 1/2 cup whole milk or half-and-half, and 1/2 tsp vanilla extract in a bowl until smooth. Chill briefly if desired. When the cake has cooled slightly (still warm but not hot), use a skewer or fork to poke holes all over the top (about 20–30 pokes). Slowly pour the milk mixture evenly over the cake, allowing it to absorb; pour in three stages, waiting a few minutes between additions so the liquid soaks in. Cover and refrigerate the soaked cake for at least 4 hours, preferably overnight, so it becomes fully saturated and creamy.

Make mango purée
Reserve about 1/2 cup of the peeled, diced mango for garnish (optional). In a blender or food processor, combine about 2 cups ripe mango flesh with 1 tablespoon granulated sugar and 1 tablespoon lime juice. Purée until smooth. Taste and adjust sweetness or lime as needed. Chill the purée until ready to assemble.

Prepare whipped cream
In a chilled bowl, whip 1.5 cups heavy cream with 3 tablespoons powdered sugar and 1/2 tsp vanilla extract until soft peaks form, then whip to medium peaks. Be careful not to overwhip. For a stabilized topping (optional), fold in 1 teaspoon of softened cream cheese or 1/2 tsp unflavored gelatin dissolved per package instructions.

Assemble mango layer
After the soaked cake has chilled and set, pour or spoon a thin layer (about 1/3 to 1/2 cup) of the mango purée evenly across the top of the cake, spreading gently but leaving enough moisture to allow the whipped cream to sit on top. If you prefer a marbled look, dollop spoonfuls of purée and lightly swirl with a knife.

Top with whipped cream
Spread the whipped cream evenly over the mango purée, or pipe decorative swirls. Use the reserved diced mango and optional toasted coconut flakes or mint to garnish the top. Lightly dust with 1/4 tsp ground cinnamon and sprinkle 1 tsp fresh lime zest if desired.
Finishing and Serving

Return the assembled cake to the refrigerator and chill for at least 1 hour so layers set together. Cut into squares and serve chilled. Each serving is best within 48 hours; the cake will become more saturated over time.
