Base Cream Liqueur
Alcohol & Flavor
Sweetening & Spices (optional)
Method
Prepare Flavor Base
- 1
Dissolve coffee
Warm 2 tablespoons of the whole milk (or microwave ~20–30 seconds) until lukewarm and stir in 1 tablespoon instant coffee until fully dissolved. This makes a concentrated coffee to blend smoothly into the cream mixture.
- 2
In a small bowl or measuring cup, combine the chocolate syrup (2 tbs) with the dissolved coffee. If using unsweetened melted chocolate instead of syrup, melt it gently in a double boiler or short microwave bursts and whisk until smooth before adding coffee.
Combine Cream Components
- 3
In a medium mixing bowl or pitcher, pour 1 cup heavy cream, 1 cup sweetened condensed milk, and the remaining 1/2 cup whole milk. Whisk briefly to combine until smooth and homogeneous.
- 4
Add the coffee-chocolate mixture to the cream mixture and whisk until fully incorporated, ensuring no lumps of chocolate or coffee remain. If using cocoa powder, whisk it in now so it dissolves into the cream base.
Add Alcohol & Flavoring
- 5
Slowly pour in 1 cup Irish whiskey while whisking gently to incorporate. The alcohol will thin the mixture slightly and help preserve it.
- 6
Stir in 1 teaspoon vanilla extract, 1/4 teaspoon almond extract (if using), 1 tablespoon brown sugar or maple syrup (optional, to taste), and 1/8 teaspoon salt. Taste and adjust sweetness or chocolate intensity as desired.
Finish & Store
- 7
Transfer the liqueur to a clean bottle or airtight container. Seal and refrigerate for at least 4 hours (overnight preferred) to allow flavors to meld and for the mixture to chill and slightly thicken.
- 8
Before serving, gently invert or shake the bottle to recombine any slight separation. Serve chilled over ice, in coffee, or in cocktails. Keep refrigerated and consume within 2–3 weeks; shake before each use.
