Prep and dry ingredients
Preheat the oven to 350°F (175°C). Grease and line a 9x13-inch baking pan (or equivalent) with parchment. In a medium bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, and salt; set aside.

Mix wet ingredients
In a large bowl or stand mixer, whisk the eggs and granulated sugar on medium-high speed until pale and slightly thickened, about 3–4 minutes. With the mixer on low, stream in the vegetable oil until incorporated. Add the vanilla extract and hot espresso (the coffee will bloom the cocoa flavor).

Combine and bake
Gently fold the dry ingredients into the wet mixture in two additions using a spatula, mixing just until no dry streaks remain. Pour the batter into the prepared pan and smooth the top. Bake for 20–25 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs (do not overbake). Remove from oven and let cool in pan on a wire rack for 15 minutes.

Melt chocolate into milk
In a small saucepan over low heat, combine the evaporated milk and the finely chopped dark chocolate. Stir constantly until the chocolate is fully melted and the mixture is smooth. If using, whisk in the light corn syrup for a glossy finish. Remove from heat and allow to cool slightly.

Add condensed and whole milk
Stir the sweetened condensed milk and whole milk (or heavy cream) into the warm chocolate-evaporated milk mixture until fully combined and smooth. Taste and adjust — the milk mixture should be richly chocolatey and sweet.

Pour the warm (not boiling) chocolate milk mixture evenly over the pricked cake, starting at one side and allowing it to absorb before adding more. Use a spatula or the back of a spoon to help distribute the liquid. Let the cake cool to room temperature, then cover and refrigerate for at least 4 hours, preferably overnight, so the soak fully penetrates the crumb.

Chill a mixing bowl and whisk or beaters in the refrigerator for 10–15 minutes (optional but helps stability). Pour the cold heavy cream into the chilled bowl. Add powdered sugar, unsweetened cocoa powder, and vanilla.

Whip on medium-high speed until soft to medium peaks form, about 3–5 minutes. Do not overbeat — stop when the cream holds shape but is still spreadable.

Spread the chocolate whipped topping evenly over the chilled, soaked cake. Smooth with a spatula or make decorative swirls.

Sprinkle dark chocolate shavings or curls over the top and, if desired, scatter fresh raspberries or cherries. Lightly sprinkle with a pinch of sea salt to enhance chocolate depth.
