    Prep strawberries

    Wash strawberries gently and pat completely dry with paper towels. Remove any bruised berries. Leave stems intact for easier dipping. If berries are wet, refrigerate on a towel for 15–30 minutes until fully dry.

    Prep surface and toppings

    Line a baking sheet with wax or parchment paper. If using chopped nuts, toast them in a dry skillet over medium heat for 3–4 minutes until aromatic, then cool and chop finely.

Melting Chocolate

    Set up double boiler (preferred)

    Place a heatproof bowl over a saucepan with 1–2 inches of simmering water (bowl should not touch water). Add chopped dark chocolate and butter to the bowl. Stir frequently with a flexible spatula until melted and smooth. Remove from heat and stir in the optional neutral oil for added shine. Keep the chocolate warm over the slightly warm (turned-off) pan while dipping.

    Microwave alternative

    Combine chocolate and butter in a microwave-safe bowl. Heat at 50% power in 20–30 second bursts, stirring thoroughly between bursts until fully melted and smooth. Add oil if using.

    If the chocolate thickens while working, rewarm gently over the double boiler or in short microwave bursts. For a thinner coating, stir in 1/2 tsp more oil; do not add liquid (water) as it will seize the chocolate.

Dipping & Coating

    Dip strawberries

    Hold a strawberry by the stem, lower it into the melted chocolate up to the shoulders, then lift and let excess chocolate drip back into the bowl while turning the berry to create an even coat. You may use a fork or dipping tool and a second fork to tap off excess.

    Set the dipped strawberry on the prepared parchment-lined baking sheet. If adding nuts or a sprinkle of sugar, do so immediately while chocolate is wet so they adhere. If applying fleur de sel, sprinkle very lightly once chocolate is almost set but still tacky.

    Second coat (optional)

    For a thicker, glossy shell, allow the first coat to set briefly (2–3 minutes at room temperature), then re-dip the strawberry quickly into the chocolate and set again on the sheet.

Decoration

    White chocolate drizzle

    If using, microwave the white chocolate in short bursts (or use a double boiler) until smooth. Transfer to a small piping bag or a zip-top bag with a tiny corner snipped. Drizzle thin lines over the set dark chocolate. Do this once the dark chocolate has mostly set but is still slightly tacky for the drizzle to adhere.

    Add final touches

    Sprinkle any remaining chopped nuts, a tiny pinch of coarse sea salt to contrast the dark chocolate, or a light dusting of sugar if desired. Let the strawberries finish setting at room temperature for 30–45 minutes, or refrigerate for 10–15 minutes to speed up setting (avoid long refrigeration which can cause condensation).

Storage & Serving

    Serve the chocolate-covered strawberries within 24 hours for best texture and flavor. Store in a single layer in a cool place or in the refrigerator (briefly) separated by parchment, uncovered in a shallow container to avoid sweating. Consume within 48 hours for best freshness.
