Dark Chocolate Truffles

    Prepare chocolate

    Place the finely chopped dark chocolate in a medium heatproof bowl. Use good-quality chocolate (70–75% cocoa) for a balanced dark flavor and smooth texture.

    Heat cream

    In a small saucepan, combine the heavy cream, light corn syrup (or honey) and the pinch of fine sea salt. Heat over medium until it just begins to simmer and small bubbles form around the edge—do not boil.

    Make ganache

    Pour the hot cream mixture over the chopped chocolate. Let sit untouched for 1 minute to soften the chocolate, then gently stir with a spatula from the center outward until the chocolate is fully melted and the mixture is glossy and homogeneous. Stir in the unsalted butter until incorporated. If any small unmelted pieces remain, microwave the bowl for 10–15 seconds and stir again.

    Chill ganache

    Cover the bowl with plastic wrap and refrigerate until the ganache is firm enough to scoop, 1.5–2 hours. Alternatively chill in the freezer for 30–40 minutes, checking often to avoid freezing solid.

    Portion truffles

    Line a baking sheet with parchment. Using a small cookie scoop or a teaspoon, scoop uniform portions (about 3/4 to 1 tablespoon each) of the chilled ganache and place them on the prepared sheet. If the ganache is too soft to scoop, return it to chill until firm enough to handle.

    Roll and shape

    Lightly grease your hands with a tiny bit of neutral oil or dust them with cocoa powder. Quickly roll each portion between your palms to form a smooth ball. Work quickly so the heat from your hands doesn't melt the truffles. Place finished truffles back on the sheet and chill 15 minutes to set shape.

    Coat truffles

    Place the unsweetened cocoa powder in a shallow bowl. For variation, put finely chopped toasted nuts in a separate bowl. Roll half the truffles in cocoa powder to fully coat; roll others in chopped nuts if using. Tap off excess coating. Return coated truffles to the sheet.

    Finish and serve

    Optional: sprinkle a tiny pinch of flaked sea salt on top of a few truffles for contrast. Refrigerate truffles in an airtight container for up to 2 weeks or freeze for up to 3 months. Bring to room temperature (15–20 minutes) before serving so flavor and texture bloom.
